Enjoy a Quick Family Meal with Minute Rice

Are you a busy mom that is looking for a great way to cook a wonderful dinner quickly? Well minute rice is something that you must have in your home. It is a great ingredient that will help you make a quick meal that your family will love.

Here are some great recipe ideas from Minute Rice
 

Lunch Ideas:
Provencal Rice Salad
Serves:  2 (about 1 cup each)         

Ingredients:         

1 container Minute® Ready to Serve Multi-Grain Medley or Minute® Ready to Serve Brown Rice
1 can (6 ounces) canned tuna, drained
4 cherry tomatoes, halved
4 black olives, sliced
2 tablespoons red wine vinaigrette
1 cup salad greens


 Directions: Prepare rice according to package directions. In a medium bowl, combine rice, tuna, tomatoes, olives and vinaigrette; mix well. Serve over greens and/or with pita chips.


 Hawaiian Rice

Serves:  2 (about 1 cup each)         

Ingredients:

1 container Minute® Ready to Serve White Rice or Minute® Ready to Serve Jasmine Rice
1/2 cup cooked low sodium ham, cubed
1/2 cup fresh or canned pineapple chunks
1/4 cup cooked green peas or sugar snap peas
1 teaspoon sesame oil
1 teaspoon soy sauce


 Directions: Prepare rice according to package directions. In a medium bowl, combine rice, ham, pineapple, peas, sesame oil and soy sauce; mix well. Garnish with toasted sesame seeds and chopped cilantro, if desired.


 Dinner Recipe Ideas:
 Yummy Orange Chicken and Rice 
Makes 4 Servings

Ingredients:
1 jar (12 ounces) orange marmalade
1/2 cup orange juice
1/2 cup water
2 cups cooked chicken, grilled or roasted (Alternative: try 2 cups of cooked turkey)
1 large orange, washed and thinly sliced
1 cup frozen sugar snap peas, thawed
2 cups cooked, Minute® White Rice or Minute® Whole Grain Brown Rice


Directions:
 1. In a small sauce pan add in: marmalade, orange juice and water. Simmer until blended and reduced about 50 percent. It should be like syrup.

2. Add chicken, orange slices and peas until all are hot.

3. Serve over rice. If desired, sprinkle with slivered almonds.


The recipes sound wonderful! I was very fortunate to be able to try out Minute Ready-to-Serve Rice, a great time saver for a busy working mother like me. There were so many great flavors to choose… I went with the delicious sounding Minute Ready-to-Serve Rice Italian Rice.


My life is very hectic, I am on the go all the time from morning to night. I am up in the very early morning hours and then I am off to work, and as soon as work ends it is time for my full time job as a mom. By the time I am home and I pick my daughter up I have just about an hour to help her with her homework and get dinner on the table. Yes it can get a bit crazy at times. Luckily I had an easy meal idea for tonight’s dinner. It was a super easy recipe with 3 ingredients! Yes only 3! It is super easy and very good. (I did not have any fresh veggies in the house, I know, I know bad mommy… next time I make this I will add some steamed broccoli to the ingredients).
All you need is:

Chicken Sausage (5 links)

2 packs of Minute Ready-to-Serve Rice Italian Rice

Cheese of your choice (1/2 cup)






Cook the chicken sausage in a pan, I cube the sausage, my family likes it smaller and it is easier to eat.  Cook the Minute Ready-to-Serve Rice Italian Rice following the easy directions. Get out a casserole dish, add the rice, cooked chicken sausage and top with cheese. Bake for 5-10 minutes at 350 degrees just wait for the cheese to melt. 


This is easy and makes a very quick and tasty meal. This meal took 15 minutes from package to table. My family loved the Italian rice flavoring, with the mixture of the chicken and cheese it was a delicious combination.  Rice for us is a staple in our meals, a great addition that can go with just about anything. From a spicy fried chicken rice, to a sweet rice pudding.
There is just so much you can do with rice. And being a very busy person Minute Rice is the only way to go for us. This rice gives you precious time that you need to do other things. Quick and easy - sounds great for a busy school night. Honestly, I never thought of adding ingredients to a rice cup like that to make it a full meal. Great idea.
