Lucky Leaf Blueberry Snack Bars, a great spring treat the family will love #Recipe #Giveaway #LuckyLeafSpring

Are you a fan of cheesecake and Blueberries? Well I have a great recipe for you! This recipe is very simple, and even with my busy schedule it was a snap for me to put together and my family loved it! I was also very fortunate to be able to check out a lovely flower arrangement from FTD, what says spring more than lovely flowers? The Colorful World Gerbera Daisy Bouquet was a colorful lovely way to celebrate the beginning of spring, and made my home feel brighter and ready for the warmer weather.


My parents were coming down to visit for the day and I wanted to make something special for them, and my time was short they were going to arrive in less than an hour… What could I make?? I needed something that did not require a long time to make and set up....(but something that tastes like it took forever to make) I decided to make the quick and easy to make, Blueberry Snack Bars! 

 

Ingredients

  • 118-ounce package yellow cake mix
  • ½cup butter, melted
  • 3eggs
  • 18-ounce package cream cheese
  • 2 ½cups confectioners’ sugar
  • 121-ounce can LUCKY LEAF® Premium Blueberry Pie Filling
  • ¾cup flaked coconut
  • ¾cup walnuts, chopped

Instructions

Preheat oven to 325˚F. In large mixing bowl, blend cake mix, butter and 1 egg. Pat mixture into buttered 10X15-inch jelly roll pan. 
Beat cream cheese until fluffy; blend in 2 eggs and sugar. Pour over cake mixture. Spoon LUCKY LEAF Premium Blueberry Pie Filling on top. Sprinkle with coconut and nuts. Bake for 45 minutes until lightly browned. Cool; cut into bars.

(I omitted the coconut and walnuts for preference.)


The bars were creamy and sweet, the cheesecake was delicious the blueberries had just the right sweetness . The two flavors went very well together.  My father asked me if this was made from scratch, because it was so good…. I told him how easy it was to make, and he was surprised. This was a big hit, and I would make this again in a heartbeat. I thought it was delicious, and so did my guests.

As I have always enjoyed cooking from being a young boy to the present; I have always admired new ideas for using similar ingredients that I have laying around the house! Therefore I have chosen to pin this recipe and let my family try it out. The way its put together has a final input of making such an amazingly good dish.

We might even use this at the bake-sale for fund raising money for a new computer room and computers.
