Boo-itful Brown Sugar Blueberry Cookies fun for Halloween! #Recipe


Are you looking for a great treat this Halloween season? How about some Boo-itful Brown Sugar Blueberry Cookies?


The cookies are sweet and are full of yummy blueberries, they remind me of muffins, but are less crumbly and easier to eat than muffins. 

I made these great cookies recently and decorated the plate with little bat and spider rings it was cute and spooky.

The kids loved these cookies, and I felt better about giving them these cookies rather than candy, and they did not seem to mind, in fact they loved the cookies more!

Here is the delicious recipe (beware.... these cookies will go fast!!!)

 

 Boo-itful Brown Sugar Blueberry Cookies

makes 12-15 cookies
1 stick butter
3/4 cup packed brown sugar
1 egg
1 teaspoon vanilla extract
1 cup all-purpose flour
1 box of vanilla pudding
1/4 teaspoon salt
1/2 teaspoon baking powder
1 1/2 teaspoons cinnamon
1 tablespoon milk
3/4 cup Lucky Leaf Blueberries (you will not need the whole can… use the rest to top pancakes or something else yummy mmm…)

Preheat oven to 375.

Beat butter and sugar with an electric mixer until smooth. Then add egg and vanilla, mixing well Stir in flour, pudding mix, baking powder, salt, and 1 1/2 teaspoons cinnamon. Using a hand mixer . Add in milk. Gently add in blueberries with a spatula, I rinsed a bit of the delicious  pie filling off of the blueberries (I know it is so delicious why do this? Well you do not have to, but your cookies will be purple. Purple is just fine, and tastes even more like blueberries, just wonderful. But I did not want to field the constant question of why are the cookies purple... it is up to you.)  Refrigerate for 30 minutes this will make the dough easier to roll into balls.  Remove dough from fridge and roll into 1 1/2 inch balls Bake at 375 for 10-12 minutes.


These cookies are a winner and I will be making them again, for Halloween night. We like to have the family over, and the kids go out trick or treating together and we all have a great time.
