A great Valentines treat Apple Spice Babycakes from Lucky Leaf #LuckyLeafLuckyMe #Recipe





With the chill in the air, it just puts in the mood for baking so I wanted to whip a up a special valentine treat for my special valentines my husband and my daughter. I looked around the Lucky Leaf site, and I was amazed with the amount of great recipes on the site… But what to make? I wanted to make something simple, but great so I decided on the  Lucky Leaf

Apple Spice Babycakes.



Here is the simple recipe from the Lucky Leaf site:


Apple Spice Babycakes


Ingredients

  • 121-ounce can LUCKY LEAF® Premium Apple Pie Filling
  • 118.25-ounce package spice cake mix
  • 3eggs
  • 1Tablespoon butter
  • 2Tablespoons packed brown sugar
  • ¼cup pretzels, crushed
  • 3Tablespoons pecans, chopped
  • vanilla ice cream

Instructions

Preheat oven to 350°F.

Grease or line twenty-four 2 1/2-inch muffin cups with paper baking cups and set aside.

Chop one can of LUCKY LEAF Premium Apple Pie Filling into bite-sized chunks. Reserve 1/2-cup of  LUCKY LEAF Premium Apple Pie Filling for topping.

In a large mixing bowl combine cake mix, eggs and  LUCKY LEAF Premium Apple Pie Filling. Beat with an electric mixer on low speed until combined. Beat on medium speed for 2 minutes (batter will be thick).

Fill prepared muffin cups about 2/3 full with cake batter.

Bake about 20 minutes or until tops spring back when lightly touched.  

Cool in cups on a wire rack for 5 minutes.  Remove from cups and cool completely.

For streusel: In a small skillet melt butter over medium heat. Add brown sugar and stir to combine. Add pretzels and pecans. Cook and stir for 1 minute. Remove from heat and set aside.

Place each cupcake on a dessert dish. If using paper cups, pull paper down around bottom of cupcake.

Top cupcake with a small scoop of ice cream, then top with reserved  LUCKY LEAF Premium Apple Pie Filling and streusel.



This was so very easy to make, I tried to surprise my husband but the great smells that filled the house gave my surprise away… My husband comes into the kitchen asking … what is that great smell, it smells like the holidays in here.   I said I had a surprise for him, and asked him to check back in a little while for his treat. In no time I had these great looking baby cakes.


 When I made the cakes I omitted the pecans, just because my husband is not the biggest fan of them, but I am sure the baby cakes would taste just as great with the nuts. My husband  and daughter waited patiently while I decorated and got his special  valentine’s day treat together.


I simply got some treat bags that are made for muffins/cupcakes, these are treat bags that you can pick up at a local craft store.  And to make them even more special I printed out some cute decorations and a treat card to put in the package.

 





After I presented them with their decorated treats they just loved them, they loved the little note saying how much I love them both and of course they could not wait to dig in and try the scrumptious treats. My daughter just loved the pretzel strudel and the apple topping. 

Of course my husband loved the apples with the spice flavoring saying it was delicious and moist. Yes I admit it I had to make one for me to try as well, they just looked to good. It was delicious. I can’t believe this took about 25 minutes to make they taste like they took hours to make. I was also able to share some of these treats with my co-workers and they raved about the treats saying they tasted like easy to eat apple pies.
