Lucky Leaf Apricot Vanilla Cake #Recipe





I had some free time yesterday and I was in the baking mood so I wanted to make something with Lucky Leaf. This is a slight variation of a new recipe from the Lucky Leaf site, (this was the Cherry Vanilla Chocolate Cake) I made my own version of this recipe, with what I had on hand and it was wonderful! It took a short time to make, and it was so moist and delicious. This would be a great Easter treat for the family.  Here is the recipe:



Apricot Vanilla Cake



Ingredients

  • 116.25-ounce box white cake mix
  • 3eggs
  • 1 21-ounce can LUCKY LEAF® Apricot  Pie Filling
  • 2 Tablespoons warm water
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • ¼ teaspoon salt
  • 1 ⅔ cups powdered sugar



Instructions

Preheat oven to 350ºF.



Combine all cake ingredients together using a spoon or spatula. Pour evenly into a greased bundt pan or 9x13-inch cake pan.

Bake 35-45 minutes in a bundt pan; 30-35 minutes in a 9x13-inch cake pan.  Cake should be golden brown. A toothpick inserted in center will come out clean.



Optional Icing: Combine first 4 ingredients together. Add powdered sugar and mix well with an electric mixer until desired consistency is achieved. Drizzle icing over cake and serve.

It is simple to make and it is so sweet and delicious. If you cannot find Lucky leaf Apricots in your store, you can substitute Lucky Leaf Peaches, I am sure that will be just as good. 

If you are looking for a recipe that is simple, but tastes anything but simple I would recommend Lucky Leaf Apricot Vanilla Cake, your family will love it.

I'm not a huge fan of apricots as a fruit on it's own. I definitely don't like fruit pies. But this looks like something I would try because it is a cake. I am all about cakes. One of my "13 Things to do in 2013" New Year's goals is to make 52 new recipes without changing one ingredient (I am notorious for taking things out and/or substituting when I don't like something!). I would try this as a nice spring cake to share at a family dinner!

The first thing I noticed was how moist this cake was. I never make boxed cake because it is usually too dry for me and hubby but this cake looks like something I would try, plus we love apricots.

Yes, that finished product sure does look yummy! Your family is lucky, you bake such nice things for them. The difference I would make to your recipe is to toss a couple of strawberries on top. Wonder if mine will come out as nice as yours??
