Dinner Idea:



Honey-Ginger Baked Salmon with Jasmine Rice

Makes 4 Servings      LOADING IngredientsAmount Measurement Ingredient

2 bags Success®Jasmine Rice

1/3 cup orange juice

1/4 cup light soy sauce

1/3 cup honey

1 Tbsp garlic, minced

1 Tbsp fresh ginger root, minced

4 (4 oz. each) salmon fillets

1 tsp oil

1/2 cup red bell pepper, sliced

1/4 cup green onion, sliced



Directions Prepare rice according to package directions. Heat oven to 375º.

In a small saucepan combine orange juice, soy sauce, honey, garlic and ginger. Cook over medium heat for 1 minute. Reserve 2/3 cups marinade.

Place remaining marinade and salmon fillets into a plastic zippered bag and refrigerate for 15 minutes.

Remove salmon from marinade, place on aluminum foil-lined baking pan and bake for 20 minutes. Meanwhile, return 2/3 cup reserved marinade to small saucepan and simmer over medium-high heat for 5 minutes or until syrupy.

Heat oil in a medium skillet over medium heat.  Sauté red bell pepper 2 minutes.  Add peppers to cooked rice. Remove salmon from oven and serve over rice. Top with sauce and garnish with green onions.



My life is very hectic, I am on the go all the time from morning to night. I am up in the very early morning hours and then I am off to work, and as soon as work ends it is time for my full time job as a mom. By the time I am home and I pick my daughter up I have just about an hour to help her with her homework and get dinner on the table. Yes it can get a bit crazy at times. Luckily I had an easy meal idea for tonight’s dinner. We had tamales and rice (no I did not make the tamale, I know perhaps I will try to make my own one day…). You may ask, Jasmine rice in a Mexican meal? It was a great tasting combination, the unique taste and great fluffiness of the rice worked well with the salsa and the meat.


This is easy and makes a very quick and tasty meal. This meal took 15 minutes from package to table. My family loved the Jasmine rice flavoring, with the mixture of the salsa and beef it was a delicious combination.  Rice for us is a staple in our meals, a great addition that can go with just about anything.
