I am a big vegetable fan, I always have been. I am up for trying just about any type of veggies, be it canned or fresh I am a fan of just about all kinds. But my little girl does not share my love of vegetables… well not anymore. When my daughter was a toddler, she would try everything, and she loved so many foods that were great for her. As she gets older she is starting to dislike so many of her  former favorite food from hot dogs to any king of vegetable. She used to eat veggies all the time, and now I have to beg and try to coerce her to eat the veggies.  After some practice, I have gotten pretty good at “hiding” veggies, hey a mom has to do what a mom has to do.

I was very fortunate to be able to check out a few of the variety of veggies that are from Allens vegetable family, Sweet Potato’s, Mixed Vegetables and Spinach. Being a busy working mom, I am always looking for healthy and easy to make side dishes for my family.  Last night I whipped up a great rice and spinach side dish.
 Herbed Spinach and rice

1 can of Popeye’s canned spinach
½ stick of butter
1 table spoon of parmesan cheese
1 teaspoon of salt
½ teaspoon of pepper
1 teaspoon of garlic powder
½ teaspoon of thyme
2 cups cooked rice
2 tablespoon of Worcestershire sauce
¾ milk
 Strain spinach, add to large mixing bowl. Add salt, pepper, thyme, garlic powder, rice Worcestershire sauce, mix well. Add softened butter and milk mix well. Heat then serve. 
The herbed spinach rice was amazing. It had just the right amount of spice and when mixed with the rice and the spinach… it was delicious. This reminded me of a side dish you would get from a fancy restaurant, but made at home with ease for a lot less money. The most amazing thing was that my daughter at it, and loved it! She kept saying, this isn’t bad… I like this…. That was a great thing! 
I made a chicken noodle soup, and added the mixed vegetables, the soup had great flavor and the veggies made the soup delicious and filling. For the sweet potatoes we just enjoyed them right out of the can. Yes my daughter ate them as well. They were so sweet and delicious it is not hard to see why she loved them. The sweet potatoes were like a candy side dish, sweet and yummy. Next I will be making a marshmallow, cinnamon mashed sweet potatoes, I am sure my family will be big fans.
