The Cheeses of Europe, Balsamic Onion Brie Pizza #Recipe

We're a family of cheese lovers, we are huge fans of cheese. But sometimes I feel like there has to be more than the classic American cheese and Cheddar cheese.. Sure they taste great and they are family favorites, but there is a world of cheese out there to discover with new flavors we should try.
 I don't want my daughter to be afraid to try something new, just because it may smell different or look different, this does not mean it is not delicious.  We were given the challenge to discover a French cheese, and come up with a recipe. There are so many cheeses to choose from and when we picked a cheese what the heck do we make?! The opportunities are endless! Do I make a chicken dish?
                    

What about a pasta dish? Adult grilled cheese? Do I want a mild cheese or a cheese with a bite? A creamy cheese or one that's a little harder? Ugh...I hate having to make decisions!! Finally we opted to make a pizza. I found a wonderful recipe from The Cheeses of Europe, and tweaked it a bit to make it something my family would love. But this isn't just any pizza this pizza isn't your typical pie. My idea was to make a quasi version of a French onion soup pizza. I wanted the flavors of that soup but in the form of a pizza and I think we did really well.

Balsamic Onion Brie Pizza
Ingredients:
1 pie crust
1 1/2 tbs olive oil
8 oz Brie
1 large tomato
2 tbs sweet onion
1 tbs minced oregano
2 tbs grated Parmesan
2 tbs Balsamic Vinegar


Directions:

Bring pie-crust to room temperature and unfold onto a floured baking sheet. Fold 1/2-inch over the edge of the pan and crimp the edges. Preheat oven to 400°F. Remove the rind from the Brie and cut into Small cubes. Cut tomatoes into thin round slices. Slice olives as desired. Spread olive oil over crust and sprinkle with half of the Brie. In a separate pan add the sliced onions, cook down until the onions are soft and browning, then add the 2 tbs Balsamic Vinegar and mix well with the onions. Add tomatoes to the top of the pizza. Top with pizza with onion, the remaining Brie, oregano and Parmesan. Bake approximately 20 minutes, until the crust is crisp and cheeses are slightly bubbling.
France has a large variety of cheese from Bleu, Brie, Munster, Comte and Emmental just to name a few. We ultimately decided to use brie, having never made anything with brie prior I didn't know how it would work but it looked like it fit the role. 



It's a creamy cheese and looked like it would melt evenly and it did. This is a great cheese for melting over something. The taste is wonderful, and pairing it with the balsamic onion's I cooked to a nice caramelized state and the tomato's I used as a compliment to bring it together as a pizza this was a home run. My family really enjoyed the taste of the brie and raved about the flavor of this pizza.  I am now looking forward to trying more French cheeses in future recipes, and I look forward to sharing some new ideas with you all.

I love brie! I usually just make baked brie, but it is a genius idea to use on pizza! I am totally going to the groceries and making this pizza for dinner! Thanks for the recipe and tip!

I love all types of cheese, seriously. Brie on a pizza? I've had it on flatbread before but it looks like I have been missing out. Yum!

Love brie and those balsamic onions were making my mouth water. I've never had brie on pizza before. Will have to give it a try.

I would probably say Brie is it. We used to go to Belgium all the time and my grandma would have an assortment of cheeses and crackers every day for snack time. I loved it :)
