Spiced Avocado Toast Recipe featuring Little Northern Bakehouse bread, a great addition to brunch!

Can you believe that it is already mid April? The year is just flying by! Before you know it, it will be Easter, and then Mother’s Day. Yes they are each right around the corner. What do you usually plan to do for Mother’s Day? Do you plan any special events for those special moms in your life? I like to have my grandmother and mom (I am so very lucky to have each in my life) over for a nice meal. We love to plan brunch. 
Breakfast and lunch who can go wrong with that? This year I am teaming up with Little Northern Bakehouse to make a yummy recipe for our Mother’s Day brunch. I wanted to come up with something easy, something vegan, and delicious. Avocado toast it is! I have been seeing this on menus all across town, it seems like Avocado Toast is the new big thing. I whipped up a recipe I came up with using basic vegan ingredients, and hearty delicious Little Northern Bakehouse Seeds and Grain bread. 
Spiced Avocado Toast

Ingredients:
1-2 ripe medium sized Avocados
Little Northern Bakehouse Honey Oat Loaf
2 tbs Light olive oil
½ teaspoon of cumin
½ teaspoon of paprika
2 cloves of garlic
Salt
Pepper
Jalapenos
Small lime
Directions:
Mix avocado and spices in bowl with finely chopped garlic, then add oil. Squeeze half of a lime in the mix. I like to make sure I get as much lime pulp into the mix, (the pulp really gives it a pop) Toast bread, and cut into half’s or quarters (depending on how you would like to serve, more of an appetizer or finger food?) and spread on toast. Top with an additional dash of cumin and paprika, squeeze of lime and chopped jalapenos and serve.

This was a very easy to make dish that would be a great fit for brunch! My family and I just loved the slight spice of the avocado mixed with the sweet of the Seeds & Grain Loaf they really complemented each other well. Do you have any special plans for Mother's Day?
