Celebrate National Egg Month by making Scrambled Egg Muffins, with Pete and Gerry's Organic Eggs! #Recipe

Did you know that May is National Egg Month? Yes May is the best month to enjoy all of your favorite incredible egg recipes! Is your favorite egg dish, breakfast lunch or dinner option? 

I have teamed up with Pete and Gerry's Organic Eggs, to make a great egg dish a recipe that draws attention to all of the amazing nutritional benefits of eggs!... But before we go into that did you know the FDA has said that organic eggs are not in the guidelines on what is deemed healthy?

Can you believe it?  Pete and Gerry's Organic Eggs as a part of the Eggs Are Healthy campaign petitioned the FDA to update its guidelines around what can be deemed ‘healthy’ – spoiler organic eggs can’t but sugary cereal can. I really did not believe what I read, sugary cereals and toaster pastries... Healthy? What?

I have a recipe that will be quick and easy and portable like toaster pastries... But much more natural, and I feel much better giving these to my family than artificial items filled with preservatives. One of our favorite egg dishes are scrambled eggs, they can be so simple, yet they are so delicious. My family and I love to make scrambled egg muffins. These are delicious freshly made and are just as yummy if they are frozen and heated up for a quick meal idea. 

Scrambled Egg Muffins 

Ingredients: 
5 - Pete and Gerry's Organic Eggs
½ teaspoon of Pepper
½ teaspoon of Salt
½ cup of thick and chunky salsa
1 clove of garlic
3 tablespoons of milk
½ cup of shredded cheese

Directions: 
Preheat oven to 350. Chop garlic into small diced pieces. Whisk the eggs, salt, pepper, milk and the garlic set aside. Using a small muffin/cup cake pan. This recipe will make 6 medium-large Scrambled egg muffins. (If you would like to make 12, double the recipe) Spray muffin tin with non-stick spray. Place a teaspoon of salsa in each of the muffin molds. Pour egg mixture into each of the molds, a little more than half for each. Top with cheese and bake at 350 for 20-22 minutes.

My family and I just loved these super easy to make egg muffins. They were a very fast meal idea that literally took only a few minutes to get together and only 20 minutes until they were ready to eat. These muffins are a great idea for a make ahead snack or breakfast. I like to whip up a batch, then bake and freeze the muffins in a sandwich bag for travel. They freeze well, and are great to pack to being into work for a delicious breakfast in no time. Would you like to make these Scrambled Egg Muffins for your family?
