I was very fortunate to be able to check out Peanut Butter & Co. preserves in  apricot and strawberry jam and peanut butter, in the flavors Mighty Maple and Smooth Operator.

Are you ready for back to school? Well it is just about that time here in the Northeast, time to get the uniforms ready purchase all of the needed school supplies. One thing that always come with the new school year is school lunches, and (for me) the lack of ideas of what to make my daughter each day. Sure getting one of those meals that are pre-made with the sandwich and drink and snack is easy but they are full of salt and not something I want my daughter to have every day… So what is a mom to do? 

  Well I have to get creative and come up with fun new sandwich ideas that keep my daughter interested and of course they have to be yummy!  Last night I started practicing, why not come up with a fun tasty and exciting peanut butter and jelly sandwich? My daughter loves peanut butter and grape jelly, but I know it can get boring… I wanted to mix lunch up a bit with delicious flavors from Peanut Butter & Co.  First up I made something I never tried before, a grilled peanut butter and jelly sandwich. The sandwich was easy to make, all that was needed was:
Ingredients:
Bread
Butter
Peanut Butter & Co. Apricot  preserves

Peanut Butter & Co. Mighty Maple
I made this sandwich like I was making a grilled cheese (less the cheese), I buttered one side of each piece of bread then I added the peanut butter and the preserves after the bread was buttered, topped the sandwich with the 2nd piece of bread and grilled.. What happened next was amazing, the smell that drifted through the house of warm peanut butter, it was mouthwatering! I knew this was going to be a special sandwich.
Of course my husband had to have one as well. We all loved the melted warm Peanut Butter & Co. Mighty Maple peanut butter mixed with the Apricot preserves… The  Mighty Maple has a small crunch and a great texture that worked so well with the sweet apricot flavor and the toaster bread.  This sandwich was a winner!
Of course I had to make a classic peanut butter and jelly sandwich, with just a small twist…. My daughter has never had a peanut butter and jelly sandwich with any type of jelly that was not grape… Grape was her jelly of choice, but I wanted to have her try something new. I made a sandwich with Peanut Butter & Co. strawberry jam  apricot Peanut Butter & Co. Smooth Operator, peanut butter.
This many not sound revolutionary for a sandwich, but for my daughter it was… She loved the tart and sweet fresh strawberry taste of the jam mixed with the smooth and creaminess of the Smooth Operator Peanut Butter & Co. peanut butter.
I have two new sandwiches that my daughter is looking forward to having again in her school lunches, that is such a great thing! We all know that PB&Js are an American classic, but it’s time for a revolution! The flavor that sounds best to me is the Dark Chocolate Dreams (because I am a HUGE dark chocolate fan)! But I would also like to try the Rich & Tasty Peanut Butter Swirl Brownies Baking Mix! YUM!

What a great idea to make a PB&J like a grilled cheese sandwich! So simple but I never thought of it, especially in the Winter to make a quick warm lunch. This peanut butter is the best, my favorite flavor is the Whit Chocolate Wonderful. It's awesome & I buy it all the time!
