I recently had the chance to celebrate National Dairy Month, by coming up with a favorite recipe using cottage cheese. Cottage cheese is packed with protein, Hood® Country Style Cottage Cheese is rich, creamy and delicious. You can enjoy it in so many ways, as a topping, a dip, an ingredient or as a healthy snack. I wanted a recipe that did not mask the flavor of the cottage cheese, a recipe that really let the cheese shine.
When I was a child I remember coming home from school and I was famished, as my mother made dinner I would ask for a snack. My mother would make me cottage cheese on toast, and I loved it. My favorite version of the treat my mom would make for me is a Cinnamon Vanilla Berry Cottage Cheese Toast. It was slightly sweet, and very creamy and really was enjoyable.
Now I have a daughter and she too comes home looking for a snack, when dinner's not ready for a good bit. I enjoy making this quick and simple snack that my mom would make for me as a child, and my daughter loves the toast as much as I did. I just love that I get to share something I enjoyed so much as a child with my child, and I hope one day (in the far future) she will share this recipe with her children.
